DESCRIPTION: Flower: Small, pink in round head. About 1" across. Leaves: Three lance-shaped leaflets with pale green "V". Stem: Up to 24" tall.

HABITAT: Lawns and fields. Througout temperate North America.
HARVEST: May-August

Spring Beauty (Claytonia virginica)
EDIBLE
DESCRIPTION: Flowers: Five petals, white to pink with dark pink veins. About .5" across. Leaves: Long, narrow leaves up to 5.5". Stems: About 16" tall. Upright but sometimes leaning.
EDIBLE PARTS: All.
HABITAT: Rich woodlands. Moist fields and lawns. Eastern U.S. and Canada.
HARVEST: Early Spring: Young leaves and tubers.Can be eaten raw. Called Wild Potato because tubers can be boiled in salted water for better taste.
